Cinnamon Sugar Cashews

  • 2 bags of Sunshine Nut Co Perfectly Plain Cashews
  • 1 egg white
  • 1 tsp vanilla extract
  • ½ cup brown sugar
  • 2-3 tsp cinnamon


  1. Preheat oven to 250 F
  2. Mix the egg white and vanilla extract in a large bowl until frothy.
  3. In a separate, smaller bowl, mix the brown sugar and cinnamon until the mixture is even.
  4. Pour the 2 bags of Sunshine Nut Co cashews into the large bowl with the egg white and vanilla extract. Toss the cashews until all are evenly coated.
  5. Pour the cinnamon sugar mixture into the large bowl. Toss the cashews until evenly coated again.
  6. Spread the cashews onto a baking sheet.
  7. Bake for 50 minutes, tossing every 15 mins.
  8. Remove and cool before eating.
