Coconut Vanilla Cashew Butter

Ingredients:

  • 3 cups Perfectly Plain cashews (soaked for 1-2 hours previously in water to soften)
  • 1 cup coconut flakes or shredded coconut
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla
  • ½ cup heavy cream

Directions:

Soak cashews for 1-2 hours in water to soften them. Use a blender to blend all ingredients together. Blend for longer to make it a fluffy consistency if using for a dessert!
