Espresso Chocolate Cashew Butter

Ingredients:

3 1/2 cups Perfectly Plain cashews (soaked for 1-2 hours previously in water to soften)

3 tablespoons of coffee grinds (the blend is up to you!)

2 teaspoons olive oil

2 teaspoons cocoa powder

½ teaspoon vanilla

 

Directions:

Soak cashews for 1-2 hours in water to soften them. Use a blender to blend all ingredients together. Choose whatever consistency you like whether that is crunchy or smooth! Enjoy!
