Don Larson

Don Larson is the Founder and CEO of Sunshine Nut Company. Don has over 25 years of experience in the food processing industry. Most notably, he spent 13 years at Hershey focused on turn-around assignments in manufacturing, industrial engineering, strategic sourcing, global sourcing, commodities trading, new product introductions, and project management. After leaving Hershey, he built a cocoa processing plant for a group of private investors. After twenty-four months and a promotion to acting-CEO, he delivered a plant that produced $100 million per year. The factory was the largest, fully-automated cocoa processing line in the world. Almost immediately after completion, the factory was sold to the largest chocolate maker in the world, Barry Callebaut, which today operates this facility as its flagship facility. Prior to leaving for Mozambique, Don received and turned down a lucrative executive position at a fortune 500 food company.

In 2011, Don and his family left their lifestyle of abundance and material wealth for one of purpose. They sold nearly everything they owned – a big house with a swimming pool, luxury cars, and a hot air balloon – and poured their life savings into Sunshine Nut Co. Don and his wife, Terri, and their youngest son relocated to Africa. They are now living in Mozambique growing Sunshine Nut Company and Sunshine Nut Foundation to its fullest potential.

Terri Larson

Before moving to Mozambique in 2011, Terri enjoyed a long career as a elementary school teacher in both public and private schools. She received her Bachelor’s of Science degree in Elementary Education from the Pennsylvania State University.

Upon moving to Mozambique, she left her career behind to mother and care for the children in the orphanages and communities of Mozambique. She is now the Director of Social Impact for Sunshine Nut Company and oversees all of Sunshine Approach Foundation’s philanthropic work.

Terri is Don’s wife and the mother of three children, Cassie, 25, Brent, 22, and William, 18.

Jeffrey H. Harvey

Jeff is a Wealth Management Advisor who has earned the recognition title of Senior Vice President – Wealth Management. His career at Merrill Lynch began in 1993. As the team’s senior partner, Jeff is responsible for leading the strategic direction of the team. Some areas of his focus include: wealth management, business succession planning and corporate retirement plans. 

Jeff has served on a number of boards and investment committees over the years. He also volunteers regularly at Philabundance and the Sunday Breakfast Rescue Mission. 

In his free time, Jeff enjoys coaching his children’s teams and supporting their activities, leading bible studies, playing paddle tennis, golf and running. He recently completed his second half marathon. A University of Delaware alumnus, Jeff lives in Newtown Square, Pennsylvania, with his three children.

Jessica W. Bryington

Jessica graduated with a B.A. in Law and Society, Magna Cum Laude, from American University, and with a J.D., Summa Cum Laude, from Widener University Commonwealth Law School. She has been practicing law in Pennsylvania since 2007, gaining a variety of experience in public procurement, health care operations, and hospital acquisitions. Since 2012, she has served as General Counsel for Post Acute Medical, LLC, a specialty healthcare company that owns post-acute and surgical hospitals across the country.

Jessica met Don Larson in 2012 and instantly admired his vision for Sunshine Nut Company and shared his desire to help the destitute and forgotten. They kept in touch over the years, and she prayed how she could help this cause. She was fortunate to be able to travel to Mozambique in 2015 and witness the impact Sunshine Approach was having there. She is pleased to serve Sunshine Approach Foundation as a board member.

Jessica lives in Central Pennsylvania with her husband and two step-children. Above anything else, she loves Jesus and desires to follow Him with every decision she makes. She dreams of having a farm someday and providing for those in need in her community.

Ryan Correia

Ryan holds a BS in Accounting and a BA in Management Information Systems from Villanova University. He is a Certified Public Accountant, member of the PICPA, QuickBooks ProAdvisor, and QuickBooks Certified Expert.

Following school, he went to work in public accounting for KPMG LLP in the attestation and audit practice; after 6 years he became Audit manager for one of the largest accounts in the Philadelphia office. After KPMG, Ryan served as Plant Controller for a large manufacturing public company and focused on month-end closes, cost accounting and managerial accounting responsibilities.

In his spare time, Ryan began working with small businesses as a part-time Controller. He preferred working with small business owners and went out on his own as a sole proprietor in 2007, where he focused on accounting and tax services for small business clients.

By 2009, Ryan co-founded Foresight Business Solutions, with its mission to implement integrated financial, payroll, taxation and accounting service solutions for small businesses.   Since 2009, Ryan has worked with hundreds of small business owners from various industries and has helped grow Foresight’s team, reputation and overall client base.

Ryan enjoys quality time with his wife and three boys.  He also enjoys sports, especially basketball.


Elizabeth R. McGrail

Elizabeth is currently a mother of six children.  She holds a BA from Princeton University and an MBA from the University of Chicago. Her past work experience includes corporate finance (derivatives and bond sales desks) at GMAC, lending (leveraged buyout department) for National Westminster Bank, preceded by a stint in retailing working for BATUS Retail Group and Stern’s Department Store.
