Lemon Cashew Sugar Cookies
1 cup Sugar
1/2 cup Earth Balance vegan buttery spread
1/2 Banana or the egg-replacer of your choosing equivalent to 1 egg
1 teaspoon GF Vanilla Extract
1 3/4 All Purpose GF Flour
1/2 cup Almond Flour
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1/2 teaspoon Xanthan Gum
1/4 teaspoon Almond Extract
1/4 teaspoon Lemon Extract
1/4-1/2 cup (based on preference) chopped Sunshine Nut Cashews
1. Lightly grease (or line with parchment) 2 baking sheets. Preheat the oven to 350
2. Beat Earth Balance and sugar together until fluffy, then add banana and extracts until combined.
3. Add dry ingredients and stir until dough comes together.
4. Drop dough by teaspoonfuls onto baking sheets 1 1/2″ apart. Bake for approximately 12 minutes or until they feel set. Remove and cool.
